1. Le Gouverneur

La Residence Hue Hotel & Spa

Hue is home to Vietnam’s Imperial City, the country’s version of the Forbidden City as the seat of the Nguyen emperors. It was built on the banks of the Sông Hương, the Perfume River, a waterway that bisects the city. Right opposite the UNESCO World Heritage Hue imperial monuments is La Residence Hue, a beautiful 1930s Art Deco building that was originally the residence of the French Resident Superieure. Curving around the rotunda of the hotel is Le Gouverneur, the hotel’s bar, flanked by an extraordinary mural by French artist Roland Renaud. The bar’s signature cocktails include the heady La Résidence Monsieur (with rice wine and whisky) and the obliging La Residence Madame (with Baileys, Kahlua and rice wine), both perfect to sip on while idling the day away watching the colours shift from dawn to dusk.

2. Le Club

Sofitel Legend Metropole Hanoi

Having just undergone renovation to increase its seating capacity by a third and to introduce a new live-cooking station, Le Club at the Sofitel Legend Metropole Hanoi is a sparkling destination. With a design that calls to mind aristocratic smoking rooms with a hint of 1920s speakeasy, there is history here underneath the brand new coat of paint – the copper fixtures date back to the early 1990s and the same space housed French Indochina’s first movie screening back in 1916. And if that’s not tales to astonish enough, know that you’ll be sipping on Le Club’s signature Charlie Chaplin Martini and 1942 in Hanoi cocktails above a secret bomb shelter rediscovered in 2012 that housed actress Jane Fonda during the 1972 Christmas Bombings.

3. The Bar

The Nam Hai

Just south of Hue is another one of Vietnam’s treasures, the beautifully preserved city of Hoi An with its tumble of alleys, mish-mash of styles and an atmospheric army of lanterns everywhere. Away from the energy of the city’s cultural quarters are also some of Vietnam’s most beautiful beaches. One of these beaches is home to The Nam Hai, whose bar – simply called The Bar – opens up to a vista of soaring palm trees on the edge of the immaculate beach. 4. GIO Bar

Avani Quy Nhon Resort & Spa

Travellers to Vietnam usually head in three directions – south, to Saigon (or to give it its proper name, Ho Chi Minh City); north, to Hanoi and to the centre, to Da Nang and the surrounding cities of Hué and Hoi An. Yet there is vast territory between these three points in the long, narrow geography of the country. Some 200km north of Saigon is the town of Quy Nhon, a coastal town that is still largely untouched by the hands of commercial tourism. 5. The Long @ Times Square

The Reverie Saigon

This bar at The Reverie Saigon lives up to its name. Boasting a 48m long marble-topped counter that bridges two of Ho Chi Minh City’s most storied streets – the fashionable Dong Khoi and the monumental Nguyen Hue – The Long @ Times Square reminds us of the narrow arcades that connected thoroughfares in cities like Paris, Rome and Melbourne.
