What can you do with just three key ingredients? Plenty if you’re Armando Aristarco. The chef de cuisine at LaBrezza has introduced an all-new menu that emphasises natural flavours across a range of a la carte and degustation offerings.
The cuisine is distinctly southern Italian, recalling Aristarco’s birthplace of Torre del Greco in south-eastern Naples. His signature antipasti dish of Boston Lobster with Panzanella Salad and Burrata Cheese (S$45) sees the humble Tuscan salad paired with luxurious Boston lobster, with creamy burrata cheese sandwiched in between.
The chef’s focus on healthier ingredients comes to the fore in the pasta section of the a la carte menu, with dishes such as Carnaroli Risotto with Sea Lettuce, Hokkaido Scallop and Baeri Caviar (S$48). Dig a little underneath the firm rice grains to uncover the velvety sea lettuce sauce, a little surprise that Aristarco wants diners to discover for themselves.
