For Tetsuya Wakuda, the chef behind the rather outstanding Waku Ghin, Wakuda is his playground for traditional and contemporary Japanese cuisine, put together with innovation and only the best ingredients of the world: botan shrimp, Patagonian toothfish, A5 wagyu… the works. With the kitchen left in the hands of executive chef Pavel Nigai, Wakuda is now on a brand-new menu, filled with the dreamiest iterations of Japanese cuisine.
What’s on the menu?
Journey through Wakuda’s remarkable flavours through an extensive menu of nigiri, noodles, yakimono and more. If the table isn’t ready to commit to a 10-course chef’s menu, you’ll be happy ordering the following. Start with the Flan, a key signature featuring savoury egg custard and grilled Japanese white corn, and don’t miss out on the Hokkaido Scallop Carpaccio, topped with uni and caviar; Carabinero Prawn with Japanese Risotto; and Charcoal Grilled Ohmi Wagyu. Sip on cocktails or rare Japanese whisky as you go, and end the meal with this one dessert called Earth, where fromage blanc, smoky porcini gelato and aged balsamic arrive topped with fresh truffle.
What else is there to know?
Wakuda will soon debut its weekend brunch, where guests will be treated to a live sushi station, alongside iconic dishes (like the Flan we talked about) and an optional free-flow drink selection of sake, wine, bubbly and cocktails.
