Marking a year of creations and connections, Makoto Arami is presenting an exclusive four-hands collaboration with Dej Kewkacha, a self-taught pastry chef from Kyo Bar
Set within a cluster of colonial houses, amidst lush surroundings and tranquility, Ami Patisserie is an oasis like no other. What began as an online store in 2021 became a brick-and-mortar endeavour on 27 Scotts Road, lending fresh perspectives into the craft through intricate European-style pastries, made with fresh Japanese ingredients and a unique east-meet-west philosophy.
Inspired by the traditional wooden townhouses of Kyoto, Ami Patisserie is the work of Makoto Arami, a chef born into a family of confectioners. His love of contemporary aesthetics and reverence for tradition shine through Ami Patisserie, with made-in-Japan elegant tableware, delicate glassware and the intimate 12-seat Patisserie Café and eight-counter seat Tsudoi Dining Room, separated by paper-screen panels.
Marking a year of creations and connections, Arami is presenting an exclusive four-hands collaboration with Dej Kewkacha, a self-taught pastry chef from Kyo Bar, Thailand’s first and only omakase dessert bar. Happening this 16 January 2025, this shared affinity for Japanese and Thai cultures and flavours will be expressed through savouries and sweets over seven courses at the chef’s counter.
Available at either lunch or dinner, the S$188++ experience will include chef Arami’s Botan Ebi, Amela Tomato, Papaya with Coriander and Fish Sauce Choux; and Tom Yam Crab Croissant with Saikyo White Miso and Nori Butter; and chef Kewkacha’s Hotate, Thai Ceviche and Vanilla Dressing; and Rosé Champagne, Blood Orange and Pink Peppercorn.
