The newly relaunched Deadfall Cantina is now home to 72 agave spirits and ‘Mexi-porean’ dishes

North Canal Road’s Deadfall has gone through some kind of a relaunch. Founded by the same team behind Barbary Coast, the sister (and fancier) bar that sits above, Deadfall is now Deadfall Cantina, the everyman’s bar that’s now home to all things Mexico. Expect crackly, unfinished concrete walls smeared with bursts of explosive colours in line with the Day of the Dead, and various desert flora, such as agave, which mezcal comes from.

At the heart of the 45-seat bar (which opens until 3am on Friday and Saturday) is a selection of 72 agave-based spirits, making it one of the largest collections in Singapore. There’s mezcal, tequila and some raicilla, a lesser known spirit from western Jalisco, Mexico. There will also be whisky, bourbon, rum, gin and vodka, in case the mood calls for something different.

What you must order, though, are the well-balanced and sustainable cocktails that highlight the diverse flavours of agave spirits. Techniques like centrifugal clarification and sous vide infusion also allow for beloved Mexican ingredients to be showcased creatively. The Pasilla Mole Negroni, for instance, features a mole fat-washed gin, shaken with sweet vermouth, Campari and chocolate bitters. Other fun drinks include the Codigo Tequila Frozen Watermelon and the Piña Margarina, a piña colada-margarita hybrid.

Food, on the other hand, is made to appeal to the Singaporean palate. Think Hainanese chicken rice wrapped like a burrito, braised beef rendang relleno, salted egg yolk cauliflower tacos and chilli prawn quesadilla.
