From sashimi to ishiyaki (hot stone grilling), the lifestyle destination in our CBD serves up the freshest of ingredients using time-honoured Japanese culinary techniques
There are several reasons why Swissotel The Stamford continues to be one of the top business hotels in Singapore. It has recently undergone a major facelift, and is armed with some of the city’s most revered dining establishments such as Michelin-starred European restaurant Jaan, steakhouse Wooloomooloo, rooftop club Bar Rogue and the newly-opened Skai, a contemporary grill house that formulates its dishes with a delicate Japanese touch.
Occupying part of the Equinox complex on level 70, Skai offers diners a grill experience amidst some of the city’s most iconic skyscrapers. Here, scenic city panoramas are paired with a sublime menu that’s put together by executive chef Paul Hallett.
A must-try from the lunch menu — three- and four-course menus are available — is the Loch Fyne Smoked Salmon Fillet. Here, the famous Deep Loch salmon is perfectly seared then lighty smoked with oak. The salmon is accompanied by king crab, white clams, and wakame pearl barley. It doesn’t stop there — a fragrant clam-and-oyster broth is poured over the dish tableside. Other mains include the Iberico Secreto with roasted carrot, apple and Kinako salad and Stanbroke Wagyu Petite Tender with Endive salad.
Here for date night? The dinner menu features a selection of sharing plates and Ishiyaki, a popular Japanese cooking method that uses hot stones to grill meats. Look forward to the restaurant’s extensive range of beef that’s flown in from Australia, America, Japan and Ireland. Keep your eyes peeled for the intricately-crafted desserts too: both the Caramelised Soy Bean Cheesecake with Miso Fudge and palate cleansing Yuzu White Chocolate with Yuzu Confit showcase a well-balanced myraid of sweet and citrusy notes.
