The new menu at the three-Michelin-starred Zén will begin at S$395, with options for three different kinds of drink pairings
Thinking of your next fancy meal? Do it at Zén. The three-Michelin-starred restaurant, now under new executive chefs Toraik Chua and Martin Öfner, just unveiled a new summer menu, bursting with the full spectrum of flavours found in Nordic cuisine.
You will be committed to a culinary adventure of nine courses, and then some, starting with the Choux Bun, Västerbotten, Mackmyra Whisky. Think freshly baked choux pastry, stuffed with a spiced cheesy cream that’s infused with Swedish whisky. Other bites include the Croustade, a fried croustade shell that’s filled with creamy pumpkin velouté, saffron foam, tangy tangerines and carrot gastrique, and topped with bafun uni.
Other highlights to expect (and we trust there will be plenty more) include the Crudo, where aged hamachi is arranged in a mosaic and served with chill Amalfi lemon dashi; Scottish Scallop, seared and paired with Swedish pine shoots, finger limes and chrysanthemum flower tempura; and Grilled Wagyu A5, which features grilled Sendai, kabu turnip pureé, truffle-infused oxtail jus and Arabica coffee oil.
The summer menu is available for lunch (S$395) and dinner (S$580), with alcoholic (S$350), non-alcoholic (S$250) and mixed pairings (S$300) available.
