In recent efforts to redefine heritage gastronomy, Raffles Hotel Singapore is launching 1887 by André, the latest signature restaurant under visionary chef André Chiang and the hotel’s boldest culinary endeavour yet.

On opening day this 31 March 2026, guests will find themselves in the historic formal dining room of the main building, designed by renowned architect Bill Bensley. Here, they will immerse themselves in Chiang’s love letter to the hotel and Singapore’s kaleidoscope of cultures that have shaped him, with historical references from the property’s archives reimagined through interpretations of the city’s rich tapestry of flavours.

Expect dishes that evoke Victorian-era rituals and revived flavours from Raffles’ early dining rooms, served in the silver retained from the hotel’s bygone era, as early as World War II. Order à la carte or go the set menu route. Whichever you choose, the experience remains the same—a reflection of stories of place, people and period, forging connecting between the past and future.
