Date Night: At Maison Boulud, enjoy ingredient-focused French dining with a view

By Hannah Choo 1 May, 2024

Maison Boulud takes cues from the French Rivieria, allowing you a meal with a view of the waterfront promenade

What’s the story?

We were sorry to see db Bistro go, and we still are. But out with the old and in with the new, we suppose. Taking its place at Marina Bay Sands is Maison Boulud (also by chef Daniel Boulud), which began business in February. Like its sister concept in Montreal, it aims to enhance Singapore’s saturated dining scene with “soulful French cuisine grounded in the rhythm of the seasons and inspired by [Boulud’s] travels.” For a less flowery take on things, expect an upscale bistro that can be experienced all day, whether you are there for lunch, an afternoon snack, brunch or dinner.

What is the place like?

It is as charming as the chef. Designed by Joyce Wang Studio, the same people behind Mott 32, the restaurant takes cues from the French Riviera. Spanning across two levels, you can dine with a view of the waterfront promenade (there’s a light show that comes on at night) or get cosy in a booth at the floor below. We recommend enjoying pre-dinner drinks in the al fresco area before moving inside for more.

More importantly, how’s the food?

The food is good, just not mind-blowing. But if you enjoy an ingredient-focused meal, then we’re glad you’re reading this review. Begin your dinner with the Seafood Salad, French Oysters and Hamachi, before moving on to the Prime Ribeye, served simply with broccolini and patatas bravas, and the Porc Duo, a sharing place of Ibérico pork loin, crispy porchetta and beetroot-stuffed cabbage.

What else is there to know?

Maison Boulud runs a casual afternoon menu (2.30pm to 10pm, Friday to Sunday), featuring comfort food like Croque Monsieur, Tarte Flambée, Black Angus Cheeseburger and Lobster Roll. There’s also brunch on weekends, where both a set and à la carte menu are on offer.
