The Sake Company is bringing Mùa Craft Sake to Singapore and beyond, with just six unique labels on offer
You no longer have to look to Japan for sake. Mùa Craft Sake, launched three years ago as Vietnam’s first craft sake brewery, is made from fruit-based filtered and single pasteurised sake. Combining time-honoured Japanese brewing techniques with high-quality Vietnamese ingredients, it is produced only with Vietnamese-grown Japonica rice or Indica rice, and yeast strains imported directly from Japan.
Thanks to Elliot Faber, the beverage mastermind behind renowned dining establishments like Hong Kong’s Yardbird and Ronin, Mùa Craft Sake is now on the road, making its way to the forefront of the spirits world. Faber is a leading figure in the sake industry, being the co-writer of Sake: The History, Stories and Craft of Japan’s Artisanal Breweries (2015) and the first Canadian to receive the title of Sake Samurai (2016), a prestigious award by the Japan Sake Brewers Association.
Singapore is his first stop in an expansion across Asia and beyond, distributed by The Sake Company, a company Faber co-founded to bring family-owned craft sake and spirits to the rest of the world. Just six unique labels will be available, including its flagship product, The Classic (14 ABV), which boasts a quality akin to traditional Japanese sake. Robust and balanced with crisp acidity and sweetness, it brings notes of lychee, pear and apple to the notes, and leaves you longing for white grape and soursop with every sip. The Guava Kumquat (12 ABV), designed for easy drinking, will surprise you with banana undertones, while the Pure Rice (15 ABV), which gives off a coconut aroma with hints of pineapple and popcorn, pairs swimmingly with hard cheeses, pickled greens and mushrooms.
Interested buyers may purchase the sake from The Sake Company online, or have a taste at Draftland, 1880, Omu Nomu, Good Luck Beerhouse and Sushi Zushi.
