The story of how Hollywood legend Robert De Niro first fell in love with Nobu Matsuhisa’s unrivalled version of black cod with miso, before patiently waiting for four years until the celebrated chef finally agreed to open the eponymous Nobu New York together is widely known. Now that the Nobu empire has set foot in Singapore at the Four Seasons Hotel, it’s easy to see why De Niro was so hooked.
Both eager first-timers and die-hard fans alike will appreciate that the distinctive style of Japanese-Peruvian fusion cuisine Nobu is so revered for is replicated and executed to a tee, owing to the exacting standards upheld by executive chef Hideki Maeda, formerly of Nobu London. Mainstays like the Black Cod Miso—sweetly glazed, yet delicate to the touch—and Yellowtail Jalapeño are de rigueur, while the Tai Sashimi Dry Miso and Beef Toban Yaki—Kagoshima A5 wagyu roasted to perfection on a ceramic plate—hold their own in an impressively extensive menu. If you’re spoiled for choice (as you will be), opt for the multi-course omakase menu—ideally paired with Nobu-exclusive sake—at the chef’s table; nestled within the comfort of a private dining room, it’s the first-ever for a Nobu.
