The new Dom Pérignon Vintage 2012 finally made its grand entrance to Singapore with a special pairing menu at Michelin-starred contemporary Italian restaurant, 28Wilkie. Titled Dark Harmony, the five-course menu was designed by the talented chef Seth Lai to reflect each unique facet of the Champagne.
2012 was a remarkably challenging year for Champagne producers, marked by unpredictable weather from heavy rainfall and hail storms to summer heat waves. That ultimately resulted in lower yields but the harvest was of tremendous quality, and the fruit shines in the new vintage. The opening bouquet is full and varied, mingling flowers with fruit. On the palate, it’s energetic and vibrant, with a bright acidity, finishing on notes of ginger, tobacco and toastiness.
The pairing menu, which included a secret off-the-menu chef specialty dish of Acquerello Risotto with Daikon, Sakura Ebi and Koji, also featured the first ever vertical tasting of Dom Pérignon vintages. The Dom Pérignon x Lady Gaga Limited Edition Vintage 2010, an ample, aromatic wine highlighted beautifully the umami of the Hiramasa served with Kaluga hybrid caviar. Pairing the Dom Pérignon Vintage 2008 with fresh Tagliatelle and squid brought out its exquisite mouthfeel. For the explosive finale, a tender Lamb Saddle with Ras El Hanout balances perfectly with the powerful, effervescent Dom Pérignon Vintage 2012.
