Estiatorio Milos by chef Costas Spiliadis will offer an immersive fine-dining experience and the widest variety of Greek wine in Singapore
Estiatorio Milos may be new to Singapore, but the restaurant, as we are told, is world famous. For 45 years, it’s established itself as a pinnacle of Greek culinary excellence, spreading its wings across cities like New York, London and Dubai since its founding in Montreal in 1979.
Its upcoming Marina Bay Sands opening will be its first foray into Asia for the seafood empire, which promises a sophisticated experience and sunny Greek hospitality.
The founder
Costas Spiliadis is the founder and chef-owner behind the family-run enterprise. Originally from Patras, Greece and currently residing in Montreal with his children and grandchildren, he created Estiatorio Milos as a way of sharing his Greek heritage and mother’s hospitality with the world.
Beautiful architecture
Designed by Alain Carle Architecte, the same architect behind its restaurants in Las Vegas and New York, Milos Singapore has been incorporated with the serenity of Greek marble and wood, transporting diners to the island homes of Greece. Makes sense. The name Milos comes from a volcanic island in Greece, which you will find at the southernmost part of the Cyclades island complex.
Bringing new perspective to Greek gastronomy
Milos sets the bar for quality seafood, married with simplicity and flavour. Look forward to signatures like the Milos Special, a tower of thinly sliced zucchini and eggplant, fried to a crisp and paired with cheese and tzatziki; Lobster Pasta done the Athenian way (as seen in the photo above); and Whole Fish, baked in sea salt that the restaurant harvested by hand. Produce is flown in from the Mediterranean, and proudly displayed for diners to browse and select—an immersive fine-dining experience, if you will.
Unique wine programme
Milos will be home to the widest variety of Greek wine in Singapore, with 350 to 400 labels on hand. Half the wines here are made from indigenous grape varieties, such as Assyrtiko and Agiorgitiko, sourced from the volcanic terroir of Santorini and the mountainous slopes of the Peloponnese. But beyond wine, there are cocktails as well, made with Greek produce like olives, lemons and seasonal fruits.
