What’s the story?
We love classic French fine dining, but if a chef can turn that ‘fine’ into ‘fun’, and do it well, we are all for it. For now, all eyes are on chef Louis Pacquelin (a protégé of the great Alain Ducasse), who will be opening Les Ducs this 19 September 2024. Tucked away inside a charming heritage shophouse on Ann Siang Hill, the lofty 40-seater New York-style restaurant will be a destination for French comfort food reimagined with Asian influences.
What’s the food like?
Inventive and unpretentious, with a nod to the French brasserie. The menu is concise, with a range of small bites and large, sharing plates on offer. Look forward to moreish snacks, like the Croque Prata, a love child of the croque monsieur and prata, and starters like the Palourdes and Bouillon Javanais, where French clams, cooked in white wine and shallots, are finished in a comforting spice-rich Javanese chicken broth. The bigger plates include the T-Bone de Bœuf Angus, served with a sauce made from Kampot black peppercorns from Cambodia.
What else is there to know?
Head up a floor above Les Ducs and you will find Madame Claude, a members-only social club that will offer an exclusive community music, burlesque, access to the finest wines and plenty of other benefits at both the club and restaurant.
