Noma is shifting focus to the moveable feast, bringing two decades of inventive New Nordic Cuisine to major cities around the world—Sydney, Tulum, Tokyo and once again, Kyoto.
Following a successful spring residency in 2023 (read: sold out), chef René Redzepi and his team will be returning to the ancient capital of Japan. They will rediscover the city through hikes, foraging and various deep dives, and will spend 10 weeks at Ace Hotel Kyoto, a beautiful 1926 brick building on Karasuma Street.
Diners will see Noma get creative with local ingredients and flavours of autumn, as they immerse themselves in the season’s best, from the array of reds and golds to the wonders that grow in the forest and the sea. The team will also work closely with a network of purveyors and artisans, whatever it takes to bring itself closer to one of the richest food cultures on earth.
Make your reservation this 14 May at 7pm (Singapore Standard Time) via Noma’s newsletter and get ready to pay ahead of time. The meal will cost you €840++, which includes an alcoholic or non-alcoholic pairing, water and tea or coffee.
