Pizza, a food no longer taken for granted, is quite a star at the Mandarin Oriental, Tokyo. Designed for serious pizza fans around the world, The Pizza Bar on 38th, the top pizzeria in the Asia Pacific (and fourth best in the world in 2023), is a class of its own. In a room filled with natural light that flood through floor-to-ceiling windows (you can see Mount Fuji on a clear day), you will dine with only seven other guests, and you will be served a variety slices of pizza straight from the brick oven—and then some.
The point of The Pizza Bar on 38th is to showcase the art of pizza omakase in an intimate setting, and lucky for fans, executive chef and creator Daniele Cason is bringing it to Singapore this October (24 to 27; 29 to 31) for a pop-up. Look forward to Cason’s classic and seasonal pizzas, made with organic Italian flour with a perfect yeast to water ratio (just one gram of yeast and 80 per cent hydration) and a 48-hour fermentation. The pies are seemingly Neapolitan, revealing a moist crust with a superior crispness. Bufala, a mainstay on his menu, celebrates tradition with buffalo mozzarella, San Marzano Solania tomatoes and basil, while Pizzino, a signature favourite, is made like a sandwich with mascarpone, olives and freshly shaved white truffle from Alba.
The pop-up will run from 24 to 27 and 29 to 31 October 2024 at the Mandarin Oriental, Singapore. Book either the S$168 eight-course lunch (one appetiser, six different slices of pizza, one dessert) or S$198 nine-course dinner (one appetiser, seven slices, one dessert) degustation, and add S$120 for a three-glass wine pairing if you wish.
