Singapore’s first taste of Spain’s finest, the Rubia Gallega

Nestled in the quaint landscape of the Alkaff Mansion, UNA celebrates 10 years of serving authentic Spanish cuisine by bringing Spain’s prized beef to Singapore for the first time

Meat lovers, this one’s for you. In celebration of a decade of culinary excellence, UNA has unveiled a brand new menu. Co-conceptualised by two Michelin-starred powerhouses, executive chef Tom Kung of UNA and acclaimed chef Diego Grimberg of Hoffman Restaurant, a menu serving rich gastronomic experiences is promised. Chef Diego Grimberg has recently taken on the role of Culinary Advisor at UNA, imparting his expertise in traditional Asado grilling techniques.

Launched on 16th August, the new menu sees the permanent inclusion of the Gold grade of Rubia Gallega, touted by some to be one of the best beef in the world for its exquisite flavour and tenderness. Other prized offerings include the Asado-grilled milk-fed Morelajo lamb, sans the typical gamey taste it’s usually associated with, and ham made from Spain’s finest 5J Iberico pork, which were acorn-fed for 48 months.

So how are Asado-grilled meats any more of a standout than regular grilled ones? “The slow grilling Asado process over the open flames of the grill allows meats to develop a rich, smoky aroma, while retaining a succulent texture,” Chef Diego explains.

And for the star of the show, the Rubia Gallega beef, there’s no better way to appreciate the fine Spanish cuts than to have it prepared with traditional Spanish grill methods. The Rubia Gallega cattle, native to Galicia in north-western Spain, are known to produce some of the world’s finest steaks–and the import of Rubia Gallega beef into Singapore was only made possible through extensive efforts of the Embassy of Spain in Singapore. With their natural habitat consisting of verdant pastures, the Rubia Gallega cattle are free to roam and graze. The different grades of the beef have different fat distributions, rendered into smoky, caramelised crusts when grilled–this best complements the melt-in-your-mouth delicate texture within.

Partake in an extraordinary journey through Spain without having to spend hours on a plane. With traditional Spanish tapas and main courses such as grilled octopus and a homely seafood paella, UNA has all the flavours Spain could offer. Due to a highly limited import and supply, do indicate your interest in the Rubia Gallega and Morelajo lambs when making reservations to avoid disappointment. UNA opens for lunch on Tuesdays to Fridays between 12PM to 2:30PM, and dinner from Tuesdays to Sundays  between 6PM to 10:30PM.
