Date Night: Wine RVLT on Carpenter Street makes seafood as delicious as its wines

What’s it like at Wine RVLT?

Founded in September 2016 by Singaporean sommeliers, Alvin Gho and Ian Lim, Wine RVLT is the city’s gateway to the world of wine. Led by the philosophy of “real food and drink”, this bar is all about quality and sustainability, which means a constant flow of fun that‘s uncomplicated and naturally delicious.

What should one order?

Wine RVLT is in its seventh year running, and the food has consistently been good. While there are a couple dishes that we wish remained (the prawn pasta, for one), one can currently enjoy a seafood-centric menu until April. Expect snacks like Parmesan Churros with a generous amount of parmesan folded in, served with mentaiko taramasalata for an even greater savoury kick. Other dishes to indulge in include the grilled Anago Skewers, where shoyu-marinated sea eel is topped with puffed millet, sudachi zest and fermented ginger flower; Crystal Bread with uni butternut squash and caviar; Octopus Char Siu that’s double-glazed with a sweet XO brandy sauce; and the Chocolate Tart, a savoury sweet rendition of salty caramel, roasted hazelnuts and chocolate pastry cream.

What else is there to know?

As you might already know, Wine RVLT’s mission is to support winemakers who are committed to sustainable and ethical farming practices. It wants to “revolutionise the world of wine” by establishing a direct channel between vintners and their audiences, and as such, empower the wine community with wine that’s as delicious as it is authentic. Support them via Raw Wine, where you may find all sorts of natural wine by the box. The Pinot Party Pack, for instance, goes for S$355 and includes six different wines—the Black Estate Damsteep Pet-Nat 2021 and Borachio Pash Rash 2022, to name a couple.
