The lowdown: Newly opened on Purvis Street, Dimple is an independent bar that will appeal to anyone who appreciates Hong Kong-inspired flavours and a cosy, intimate space. Open to just 30 guests at any one time, Dimple is led by veteran head bartender Marcus Liow, showcasing cocktails that embrace the Chinese principles of love, harmony and abundance. Expect fresh, seasonal flavours and spirits specially imported from Hong Kong, paired with small plates that nurture the spirit of community.

What to order: There are a total of 14 signature cocktails on the menu, with standouts including the Mango Spicy Margarita, made with Don Ramon tequila and bird’s eye chilli, as well as the Passionfruit Martini, a refreshing concoction of Tanqueray, passionfruit oolong-infused dry sake and sea salt foam. Accompanying the menu are Hong Kong-inspired bar bites, such as Curry Fish Balls and Siu Mai.

The lowdown: Tucked inside The Capitol Kempinski Hotel Singapore, The Bar at 15 Stamford is a destination for good food and even better cocktails, for those who care enough. First opened in October 2018 as a bespoke cocktail bar, it is now home to one of Singapore’s most extensive rum collections as well as a diverse range of gin, bourbon, agave spirits and then some.

What to order: Hit the Pan-American Highway with The Lost Highway, a menu befitting for somewhere that used to be the home of the first US Consul to Singapore. The lineup shines the spotlight on 14 cities across the Americas, beginning at the northernmost terminus in Alaska with the Northern Lights, a gin- and pomelo-based tipple with mixed-herb syrups that mirror the Aurora Borealis. Other highlights include Beets by Dre, where beetroot—a Mexican symbol of celebration—finds its way into a playful riff on the Paloma; and the American West’s Gold Rush, where one might find good fortune in Michter’s bourbon, pear brandy, rosemary and black cardamom.
