Date Night: Flutes at Midtown House will be offering something special in honour of Singapore’s 59th birthday

At Flutes this 29 July to 9 August 2024, expect celebratory dishes like Wagyu Rendang and Chilli Fraser Isle Spanner Crab Spaghettini

After calling the National Museum of Singapore home for 20 years, the award-winning Flutes is now at the Midtown House, previously called the historic Beach Road Police Station. Within a space designed by David Grace Designs and enriched by Singapore-based art curator Michele Righetti, the move marks a new chapter for the restaurant, and its continuous commitment to uplifting heritage with all things modern.

Under the stewardship of executive chef Peter Rollinson, Flutes offers a refined and contemporary European menu, crafted with a subtle touch of Singapore and according to season. The kitchen ensures to source its meats, seafood and even wines from ethical suppliers, and in an effort to reduce waste, there are advanced composting and greenhouse projects that support the initiative.

Depending on the time of day, one can choose to go for the executive set lunch, weekend roast or degustation dinner. Diners can also look forward to a series of special dishes this 29 July to 9 August 2024, designed to honour the history and rich flavours of Singapore, when the island nation turns 59. Highlights include Wagyu Rendang, Chilli Fraser Isle Spanner Crab Spaghettini (topped with Yarra Valley caviar), and Aquna Murray Cod, paired with sweetcorn and fermented sambal butter.
