The modern Asian restaurant will serve the creme de la creme of oysters for a limited period only
The Shoppes at Marina Bay Sands is home to some of the city’s most lauded dining establishments – one of them being two-Michelin star Waku Ghin, which has recently attempted to reel in the lunch crowd with its snazzy five-course set lunch menu. But if Japanese fare isn’t the go-to option, one may turn to modern Asian restaurant JustIn by local celebrity chef Justin Quek, which has teamed up with oyster-producing giant Cadoret to dish up exclusive oyster menus for a limited period only.
From now until 31 December 2018, two specially-curated platters of fresh Cadoret oysters will be made available daily for $60++ (10 pieces) and $128++ (18 pieces).
Diners get to select from five varieties of premium oysters flown in from France: Belon, a three-year-old oyster harvested in deep waters before undergoing a two-month refinement process in the Belon river; La Lune, a lustrous, creamy oyster that is farmed during a specific moon cycle; Perles Noires (Black Pearl), a savoury, meaty type sourced from Utah Beach and refined in the Belon River for three months; La Cadoret Speciales, a four-year-old known for its succulent, chunky flesh and lastly La Fin De Carantec, a three-year-old rock oyster that is further cultivated for six months on high oyster beds.
Chef Justin Quek ups the ante by pairing the oysters with a range of wines from the Chef JQ Private Wine Selection, so oyster lovers, you’re definitely in for a briny treat here.
