Louise by Julien Royer in Hong Kong is the Michelin chef’s first overseas restaurant and will open on 18 June

Louise is Julien Royer’s love letter to traditional French fare

And it’s a letter we can’t wait to read. Julien Royer, the chef behind Singapore’s No. 1 restaurant Odette, is destined to achieve many brilliant things in the culinary world. At least that’s what his most recent feats have come to prove – Royer’s local two-Michelin star brainchild topped the Asia’s 50 Best Restaurants list this year. Earlier this year, he partnered Air France and designed menus for its Business and La Première classes. And in about two weeks, he will officially open his first overseas venture, Louise, in Hong Kong.

As a venture with The Lo & Behold Group and Yenn Wong (known for Cantonese fine dining space, Duddell’s), Louise will take over a charming two-storey heritage building tucked within the gardens of PMQ. Award-winning architect Andre Fu will also transform the space into something intimate and colonial chic.

Louise is set to be a true embodiment of Royer’s culinary finesse, focusing on the best of authentic French cuisine – both traditional and reimagined. The menu will be curated around ingredients that are personally sourced by Royer from long-time farmers and producers. Diners can expect to bite into Royer’s childhood; La Truffade (sautéed potatoes), Joue de Bœuf Braisée Au Vin Rouge (braised beef cheek) and Gâteau Au Yaourt ‘Maman Royer’ (yoghurt cake, frozen yoghurt and lemon confit).

Lunch and dinner will be served a la carte at the Ivory Boudoir room on the upper floor. For casual all-day dining, head to the Tropical Greenhouse lounge below, where you’ll also find a selection of specialty cold cuts and cheeses, freshly baked madeleines and the restaurant’s rendition of the classic Pâté en Croûte, a pie baked in a pastry.

And what’s a meal without an excellent wine list? One can expect to choose from a premium selection of French classics here, with some sourced from boutique wineries in the lesser known regions.

As for whether we are potentially looking at another Michelin star for Royer, only time will tell. But one thing’s for sure, Louise will be hottest new kid on the block when it opens this 18 June 2019.
