Is Singapore designed for the outdoor picnic? Not quite so, but it’s not stopping us from having breakfast at Air CCCC, on an open lawn in what feels like barefoot luxury.
Situated behind Long Beach, an old-timey seafood restaurant, Air CCCC is casually sprawled across 3,700 square metres of land, which previously served as a clubhouse for civil servants. Air, which stands for ‘awareness, impact and responsibility’, aims to inspire thought about food without being preachy. The restaurant functions as a farm, research lab, cooking school and now, a magnet for anyone who loves starting the day with pastries and coffee.
Founded by chefs Matthew Orlando (Amass, Copenhagen) and Will Goldfarb (Room4Dessert, Ubud), and entrepreneur Ronald Akili (Potato Head), Air CCCC’s new breakfast concept exclusively offers homemade bakes by Le Matin Patisserie and tea and coffee by Maxi Coffee. Available from 8am (until it’s sold out) every Friday to Sunday, the menu features signature Le Matin items like the Kouign-Amann—a buttery knot of viennoiserie goodness that derives its sweetness from gula apong, a type of palm sugar harvested from the mangroves of Sarawak, Borneo. It’s good, and possibly the best kouign-amann in Singapore.
Other items include classics like the Sourdough Croissant that’s made with an eight-year-old starter, and the Pain Au Chocolat, brushed with cascara and cacao husk extract to achieve an earthy, bronzed crust. Beyond the classics, there’s the Kenari Nut Twice-Baked Croissant, filled with a cashew and kenari nut cream and topped with kenari flakes for crunch; the Charcoal Chicken Sausage Roll that will please those who enjoy a good tsukune; and the Mushroom XO and Cheese Toastie, made with fermented mushroom trimmings, because… sustainability.
